improve [It was noted that there were a temperature fluctuation when the operator demonstrating the temperature check of the fridge which show between 5dc-8dC. The operator claims that the fridge just been opened and closed during the preparation. We did the recheck of the fridge temperature and it was still higher than 5dC. Therefore, I was unable to confirmed that the fridge is the working at the correct temperature. Furthermore, the operator using the infrared thermometer to check the temperature of the hot food in the hot-holding cabinet which it is not given the true internal temperature of the hot food.
